  • Rise Time: 45–60 minutes

  • Cook Time: 1 hour 45 minutes

  • Total Time: ~2.5–3 hours

  • Servings: 6–8

🛒 Ingredients:

  • 2 ¼ tsp active dry yeast (1 packet)

  • 1 cup warm water (110°F / 45°C)

  • 1 tbsp sugar or honey

  • 2 ½ cups all-purpose flour

  • 1 tsp salt

  • 3 tbsp olive oil (plus extra for drizzling)

  • 1 tsp dried rosemary or Italian seasoning

  • 2 cloves garlic, minced

  • Optional toppings: sea salt flakes, cherry tomatoes, olives, fresh herbs

👨‍🍳 Instructions:

🔹 Step 1: Activate the Yeast

In a large bowl, mix warm water, sugar/honey, and yeast. Let sit for 5–10 minutes until foamy.

🔹 Step 2: Make the Dough

Add flour, salt, and 2 tbsp olive oil. Stir until a shaggy dough forms. Knead for 5–6 minutes (by hand or mixer) until smooth.

🔹 Step 3: First Rise

Cover and let dough rise for 45–60 minutes, or until doubled in size.

🔹 Step 4: Prepare the Slow Cooker

Line the bottom of the slow cooker with parchment paper. Drizzle with 1 tbsp olive oil.

🔹 Step 5: Press and Top

Transfer the dough to the slow cooker. Press it out evenly. Use your fingers to make dimples across the top. Drizzle with olive oil and sprinkle with garlic, herbs, and optional toppings.

🔹 Step 6: Cook

Cover with the lid (place a clean towel under the lid to catch condensation). Cook on High for 1 hour 45 minutes to 2 hours, until edges are golden and cooked through.

🔹 Step 7: Optional Crisping

For a crispy top, you can broil the focaccia in the oven for 2–3 minutes after cooking — just keep an eye on it.
